For the apples, I'd add Newton (Newtown) Pippin, if you want a late variety with excellent keeping qualities, good for eating and cooking. Most sweet cherry trees require cross-pollination. This includes Van, but I don't know the other varieties Ron listed. I've had great success with Stella, a self-fertile variety. If you have space for only one small sweet cherry, I'd recommend Compact Stella. My semi-dwarf regular Stella requires constant pruning to keep it to a reasonable size. I've only grown one variety of peach: Renton, primarily for its resistance to Peach Leaf Curl, a common disease of "Wet" Coast peach trees. I don't think that any variety is totally immune to this disease; so you'll probably have to spray fungicides on any peach tree variety that you try. Fixed copper works well and is a rather benign sort of pesticide.
