When and how to transplant { Cymbidium_Orchid }

    I am new with my Orchids { Cymbidium } and, need help_information on transplanting. and, just what to do with the { stock or spike??? } that the flower grows on. I don't know if, the stock/spike is to be cut off or, just cut down. I would like to replant very soon as the flowers now have died.
    sending a pic just to be sure this is the correct name for the plant.

    Here this might help. I just remember thousands of these in a big hot house in my youth. We used to raise them for the flower trade. One of my jobs was watering and removing black leaves. Apart from that I am not that fond of them :) but admire people who grow them. :)
