I have two ginger plants that are ready to harvest but I'm not sure what the best way to do it is. Any suggestions?

That would be the latin/species name of culinary ginger....Are you refering to culinary ginger?

If you know it's ready to harvest, wield a shovel and dig them up. Brush of the dirt & store them in a dark dry spot at room temperature....you'll have to do more research for more long term storage.

    Howdy junglebug,
There are indoor plants sold as ginger but they are not the table or culinary ginger, Zingiber offcinale. If you have z. officinale, the proper time for harvesting depends of what you want. For young ginger, you can harvest within two months of sprouting. If you want old ginger as those available in the supermarket, you will have to wait till the tops die down. Ginger even in the tropic dies down and rests for a short period before sprouting again.
    Peace
