looks like a sunflower but not a sunflower

    I have bought a house and inherited a beautiful but run down garden. Last spring, when digging and adding manure to the back area I dug through what appeared to be some type of very large tuber. Carefully did the rest...long wait for summer growth...etc. The resulting plant reminds me of a sunflower but no flower, none at all. Is now starting to die back and wilt. Giant plant, large teardrop shaped leaves and each root ends in a teardrop shaped bulb. Any help or ideas would be greatly appreciated

    Compare to Helianthus tuberosus.

    Thanks, I have compared pics and it does appear to be the Jer. artichoke / Helianthus.
