Grafting is indeed worth trying. I highly suggest you check out a book on the topic from the library. The Royal Horticultural Society (RHS) puts out quite a good one with very helpful diagrams but there are other good books as well. Many fruit trees and some roses can be done with what is called a 'whip and tongue' graft - generally this is done in the Spring, though some kinds of grafts are done in the summer and some in the very early winter. A good book should be able to tell what condition the branch or shoots (ie. very firm or very soft and pliable) should be in in order to maximize your liklihood of success. Roses can also be propagated from cuttings - depending on your reasons for propagating in the first place. Good luck!
