Best apple tree for apple sauce?

    I'm putting my wish list together for next spring, and I was wondering if anyone knew of a good apple tree for apple sauce? Im in the pacific northwest and already have a couple apple trees, so pollination shouldn't be a issue. Any sugestion would be appreciated.

    'Gravenstein' is good. The other apples that happen to be there won't necessarily be cross-compatible.

    I like a mix of Northern Spy and King, good balance of flavours. As it's entirely a matter of personal taste (tart vs. sweet, or combinations thereof) it depends. Can't go wrong with either, though, both for sauce and good apples.

    I find my transparents make really good sauce as well, with the added bonus of a skin that breaks down in the course of cooking, and a very early apple (early August). Might be worth considering, on account of it's early fruit and other virtues, given you already have a couple of (presumably) later season types.
