I have poppy plants gowing in my garden, my husband popped in a few seeds 6 or 7 years ago and every year I try to dig them up, I have tranplanted some to another garden where they are groiwng well and multiplying happily, but they continue to grow in my other garden where I don't want them. How far down into the ground do their roots go, are they like dandilion roots that go down forever?

Depends on the species of poppy. Some (e.g. Papaver orientale) are perennial with persistent deep roots that will resprout after digging; others (e.g. Papaver somniferum) are annual and won't resprout from roots after digging, but do have seeds which may last for many years in the soil.

I have Papaver orientale. I also find that I don't get very many seeds from the blossoms which in itself is ashame because I like to sprinkle them on my salads and bread dough.
